My little garden of one basil plant, three surviving zucchini plants and a few sugar pea plants has produced one giant zucchini. Today I peeled and shredded it so I could make zucchini muffins. This organic monster produced five cups of delightful flesh for me to bake with. I have already made three dozen zucchini muffins, and tomorrow I hope I can accomplish the chocolate zucchini cake I have in mind for the remaining two cups I have left. I'm going to share the muffins with the neighbors because we don't need to eat them all. That, and I'm trying to build a reputation of being a good cook! :D
